Effect of the supply chain on the microbial quality of fresh broccoli.

Résumé

Microbial populations of 18 distinct lots of fresh broccoli were monitored at several steps of a supply chain to determine if the handling of the fresh produce, at each step, had an effect on the microbial quality of produce purchased by consumers. Microbial analysis was conducted on the florets of samples collected in the field during harvest (18 samples); in the supply chain (after on-farm handling, wholesale handling and retail display: 105 samples) and on 105 samples (from the same 18 lots) held under controlled temperature conditions (2°C) and sampled at the same time intervals as those in the supply chain. Populations of total aerobic bacteria (aerobic colony count), fecal coliforms and Escherichia coli were determined for each sample. All samples had mean aerobic colony counts ranging between 3 and 5 log CFU/g. Fecal coliforms and E. coli (limit of detection= 20 most probable number per 100 g) were found in 1 of 18 samples collected during harvest, 5 of 105 samples held under controlled temperature conditions, and 8 of 105 samples collected at various steps in the supply chain. No clear difference in produce microbial populations was evident between the samples collected in the supply chain and the control samples.
