Effect of temperature and relative humidity on the carvacrol release kinetics from active packaging for fresh horticultural products.

Résumé

The release kinetics of encapsulated compounds from active packaging, used for preserving the quality of fruit and vegetables, may be affected by the temperature and relative humidity (RH) of cold rooms or installations. This study aimed to characterize the release kinetics of encapsulated (within β-cyclodextrin) from cardboard active packaging at different temperatures (8 and 22 °C) and RH (57 and 97 %) up to 60 days.  The carvacrol release followed similar kinetics, with no burst effect observed, which were well adjusted (R2 of 0.96-0.99) using linear regression. The carvacrol release rates (slope value of the regression lines) among samples followed the following gradation: 8 °C/57 % > 22 °C/57 % > 8 °C/97 % > 22 °C/97 %, which corresponded to release rates of -0.0069 > -0.0072 > -0.0113 > -0.0610, respectively. In conclusion, refrigeration storage of horticultural products with active packaging did not affect the carvacrol release at normal RH conditions, being even two-fold enhanced the carvacrol release at 22 °C when it was kept at 8 °C. In conclusion, the high RH of the fruit and vegetables cold rooms will ensure an appropriate carvacrol release from the active packages even at such refrigeration temperatures.
