Résumé

In this study 75 specimens of Sparus aurata, Diplodus sargus, Dentex dentex x Pagrus major (Pantice), Pagrus major and Dentex dentex, were analysed for the shelf-life assessment, during storage at 2 °C. The results showed the importance of integrating the shelf life modelling techniques with more species specific parameters. The authors drew attention to the necessity of using an analytical integrated approach regarding the hygienic and qualitative aspects in the context of the introduction of "alternative" farmed species.
