Résumé
The paper analyses the exploitation of refrigerating installations using secondary coolants in more than 30 enterprises. The influence of coolants on changes in food products during storage periods was investigated (milk, kefir, ice-cream, kvas, beer, apple juice, etc.). Also, the influence of iron and copper ion content in the coolant solution, accumulated as a result of corrosion processes in the second contour, was also investigated. Experiments showed that substances in the base of coolants influence less biochemical processes in products than iron and copper ions which take part in the destruction of biopolymers, thus reducing the storage life of products. According to the data obtained, the safest is a coolant based on propylene glycol. The levels of coolant safety for different products are cited and the influence of inhibitors on the corrosion speed of some metals in water was examined.
