Résumé

A respiration model, based on Michaelis-Menten type enzyme kinetics, was proposed for predicting respiration rates of yellow peaches in modified-atmosphere packaging as a function of O2 and CO2 concentrations at the storage temperatures. Respiration rates were measured with the permeable system and a method suitable for either steady or unsteady states during the storage period was used. It was shown that the respiration rates decreased with increasing CO2 and increased with increasing temperature. The temperature dependence of the maximum respiration rates followed the Arrhenius relationship. The heats of respiration calculated from the rates of O2 consumption and CO2 production could be used to determine the cooling load in cold storage.
