Modelling of thermal history of vegetable salad during transport, storage and retail.

Résumé

One of the objectives of the research was the verification of the actual time-temperature history of the product during transport and retail and test the software Heatsolv for prediction of product temperature if the temperature of surrounding air and surface heat transfer coefficient are known. The comparison with prediction made by using the Cosmos software is used for accuracy testing of Heatsolv prediction. The second objective of the work was prediction value of surface heat transfer coefficient.
