Résumé

The activity of a polygalacturonase-inhibiting protein (PGIP) in growing potato (cv. Istrinskii) plants and in stored potato tubers was studied. PGIP was identified in tubers, sprouts, leaves and stems. The highest PGIP activity in sprouts coincided with the lowest activity in tubers. The highest PGIP activity was found in leaves and tubers stored at low temperature (4 °C) during the period of their exogenous dormancy.
