Study of storage Sunrise Solo papaya fruit under controlled atmosphere.

Résumé

Papaya fruits were stored for 31 days at 10 °C and high relative humidity under nitrogen containing 8% carbon dioxide and 3% oxygen, and compared with conventional storage. Samples were collected on days 15, 23 and 31, then stored for 5 days at 25 °C with 75-80% relative humidity for ripening and evaluated on days 0, 20, 28 and 36. Weight loss, skin colour, texture, soluble solids, acidity, sugar content, vitamin C, soluble pectin and decay were analyzed. The results showed that the controlled atmosphere decreased the ripening process of the fruit. There was no incidence of decay in either treatment. The controlled atmosphere storage was better than control.
