Summary

A numerical study is presented for obtaining cooling curves of Valencia orange (Citrus sinensis) and banana cv. Prata (Musa balbisiana), in different positions along the bed and conditioned in packages with 40% of effective opening area. The fruits were precooled in a forced-air system 1.933 m3/h), at 1 and 7 °C, RH= 88.5 plus or minus 2.0% and air velocity about 1 m/second. A dimensional mathematical model was applied. The theoretical and experimental curves showed satisfactory agreement. It was noted that the convective heat transfer coefficient changed with the position of fruits on the bed, and cooling time varied by approximately 38% among the different points. A temperature differential between the centre and the surface, of approximately 30%, was found.
