Résumé

The storage fife of fruit and vegetables can be improved by modulating various environmental parameters such as temperature, oxygen and carbon dioxide levels at the beginning or during the post-harvest period. A review of the main experimental results is presented and some fundamental aspects are analysed. Two series of experiments are studied: thermal and gaseous pretreatments; and gradual modifications of the storage temperature and atmosphere. Prestorage delay, preheating, high CO2 exposure, anoxia and severe hypoxia, are some of the various pretreatments to be considered. The main benefits resulting from these treatments are the reduction of senescence disorders or chilling injury. Changes in temperature and atmosphere during conventional or CA storage are concerned with progressive variations of temperature or atmosphere, intermittent warming, CO2 shocks, etc. These processes generally delay ripening and senescence and can also minimise chilling injury. An analysis of previous results is focused on the delay of ripening and senescence or the decrease of chilling injury and decay. The ripening and senescence effects are mainly related to heating exposures and high CO2 or low O2 levels. Respiratory rate as a test of plant activity and ethylene evolution tightly associated with metabolism are discussed in relation to modulated conditions. The decrease of chilling injury by thermal treatments (prestorage delay, gradual temperature changes and intermittent warming) can result either in reducing the p/ant tissue susceptibifity to low temperatures or in restoring normal metabolism which had been previously disturbed by cold. Effects on decay are then shortly discussed and emphasis is placed on periodical CO2 treatment. Future perspectives are underlined, but also the need for research.
