Designing a diffusion membrane system for modified atmosphere storage of fruit and vegetables at pallet scale: the case of bell pepper.

Résumé

For shipping bell pepper to far markets, modified atmosphere packaging (MAP) at pallet scale by using a silicone membrane system can be developed. In this work the design of a model package for packaging 5 kg of bell peppers, and the extrapolation of results to pallet scale is restudied. Red bell peppers were placed within model packages designed by us, and made with an impermeable film, in order to reach a suitable atmosphere of about 5-6% O2 and 3-4% CO2. Storage conditions were 21 days under MAP at 5 or 8 °C and 95% RH, followed by a shelf life in air of 4 days at 15 °C and 70% RH. As control, partially unsealed packages are used. Weight loss, decay, physiological disorders and sensorial quality attributes are monitored. The target atmosphere was reached at 8 °C with 0.2 dm2/kg silicone, although no steady state of gas composition was achieved. With an 1.5 dm2 window at 8 °C the equilibrium atmosphere was reached at 7% O2 and 4% CO2 being adequate for design purposes. Nevertheless, at 5 °C no steady state within packages was reached. Bell peppers stored under all MAP combinations assayed showed slightly better sensorial quality and lower decay without disorders, than control fruits, although storage at 5 °C must be preferable.
