Résumé

This article is the Spanish translation of an article presented at the IIR conference in Karlsruhe, Germany (see the Bulletin of the IIR, reference 2009-1664). It presents the development of an ice slurry plant in a large kitchen. The needs of the kitchen are detailed and a description of the plant including, ice slurry generators, distribution loops and storage is presented. The first results after one year running are given concerning the temperatures at different places in the system, the energy consumption and the COP.
