Résumé

As fresh fruit and vegetables move through the various steps of the distribution chain, the likelihood of spoilage increases. Spoilage can lead to a change in the state and the value of the goods in a variable space time context. Environmental conditions can cause consequential losses if the correct circuit for that product is not followed. The overall losses in the shop are of the order of around 5% but can reach 25% in volume for soft and fragile products. Knowledge of causes of losses and the cost can, with the help of simulations, allow the temperature and the humidity to be considered for each group of products, depending on the packaging functions specified for each sales system. Therefore, the question on the means and equipment necessary to reduce these losses needs to be addressed. Strawberry and lettuce monitored throughout the commercial circuit and in simulations have served as examples to determine possible profits.
