Résumé

A field experiment was conducted in Poland during 1994-95 to evaluate the effect of fertilization with reduced N forms (ammonium sulfate and urea), on the postharvest changes of certain compounds in roots of carrot cultivars Joba and Flacoro. The harvested roots were stored at 2-3 °C and 90-95% RH for 164 and 160 days in 1994-95 and 1995-96, respectively. Tabulated data on changes of fresh matter in stored roots (%) and on the nitrate, soluble sugar, phenol and carotenoid content in freshly harvested and stored roots are presented.
