Résumé

Winter cabbages were grown using ammonium nitrate or urea. Heads were harvested and stored at 2-3 °C and 90-95% relative humidity for about 4 months. Heads were then dropped 5 times from a height of 1 m and bruising damage assessed or shredded and stored at 20 °C for 1 or 2 days or at 5 °C for 1, 2 or 7 days before assessing the chemical composition: a decrease in soluble sugar content was observed after storage for 4 days at 5 °C. An increase in thiocyanate concentration in shredded cabbage, particularly when ammonium nitrate was used, was observed.
