DES ENQUETES ONT MONTRE QUE LA TEMPERATURE A COEUR DES PRODUITS SURGELES DANS LES MEUBLES DE VENTE ETAIT INDEPENDANTE DE LA NATURE DES PRODUITS. SI LE NIVEAU DE TEMPERATURE EST SATISFAISANT POUR LES MEUBLES FERMES, CERTAINS TYPES DE MEUBLES OUVERTS, EN PARTICULIER LES MEUBLES VERTICAUX A CONVECTION FORCEE, ONT UNE PERFORMANCE TRES INSUFFISANTE. LE RESPECT DE LA TEMPERATURE D'ENTREPOSAGE PRESCRITE : 255 K (-18 DEG C) DEPEND AUSSI DES DIMENSIONS DU MAGASIN ET DU NIVEAU DE FORMATION DE SES RESPONSABLES.
