Résumé

Data on biochemical research on frozen multicomponents of mixes of grapes, apricot, alycha, strawberry, Cornelian cherry, raspberry and blackcurrant prepared on prescription are shown; the principles of improvement of taste and increase in food value were fixed by selection of certain components and their parities. The data on the dynamics of the contents of mineral and biologically active substances after 3-month storage periods of mixes are submitted at temperature of minus 18 °C. The experimental data testify that the fruit berry mixes from the frozen fruits are a suitable dietary food.
