Production of design data for rapid cooling processes using mathematical models.

Résumé

The paper presents a method of combining mathematical modelling and empirical data to produce cost-effective design data for rapid cooling processes. The model is based on the diffusion equations for heat transfer in solid materials. A one-dimensional finite-difference model is formed and solved using either predicted input data or empirical data if known. This is then compared to empirical data and the model adjusted so that it agrees with the measured data. New predictions are then made with the adjusted model. Examples of the application of this method are given for air blast freezing of beef burgers, air blast cooling of extruded meat and immersion cooling of a ready meal ingredient (minced beef in sauce).
