Résumé

Biochemical changes in winter jujubes (Ziziphus jujuba) fruits stored at room and humid-cold temperatures were studied. Under humid-cold storage, fruit firmness, soluble pectin and starch contents, and polygalacturonase and amylase activities of half-red fruits were evaluated. The results suggest that winter jujube fruits are not climacteric. Firmness was positively correlated with polygalacturonase activity. Negative correlations were observed between soluble pectin content and polygalacturonase activity, and between starch content and amylase activity.
