Résumé

The importance of water activity parameter for food products was discussed, especially in the matter of its shelf life. The results of physical-chemical determinations of selected food products fall into various groups (among others: food concentrates, spices, bakery, meat, mayonnaises, ready-to-eat chilled products) were presented. Water activity, water content, sodium chloride concentration and pH of these products were compared with literature data for similar products. Water activity of tested products ranged from 0.2 to 0.98.
