Résumé

Atlantic salmon (Salmo salar) is the top imported fish in Japan. It is commonly shipped in chilled form by air cargo from Norway, which some studies have shown to have a high environmental impact. As sustainable solutions are sought, salmon in frozen form, which has a longer shelf life can be transported by ocean freight and may have a lower environmental impact. In this study, the CO2 equivalent emissions of the chilled and frozen salmon cold chains were assessed and compared. A quality assessment was performed by color measurement and sensory evaluation to determine whether the frozen-thawed salmon is of inferior quality. The total emission from the frozen salmon cold chain was 59% lower than the chilled form. The sensory evaluation from the panelists indicated that there was no statistically significant difference in smell, glossiness, texture, juiciness, and umami between chilled and frozen salmon.
