Résumé

To enhance the quality and commercial value of Antarctic krill blocks that are rapidly frozen onboard, it is crucial to develop technologies that enable rapid and uniform semi-thawing and tempering to prevent enzymatic reactions. This study investigated the Ohmic tempering (OT) of Antarctic krill blocks at 20 kHz. The electrical conductivities of the block were measured in the temperature range of -30 °C to -5 °C at 20 kHz. Better temperature uniformity and reduced tempering time were obtained by adjusting the voltage in four steps during OT at 50–400 V.
