Résumé

The growing incidence in humans of some food-borne parasitic zoonoses transmitted through the ingestion of fish and fish products, in 2010 led the European Commission to request the EFSA to deliver a scientific opinion on the food safety of this products for the presence of parasites. Although there are many helminths that could infect fish, shellfish and crustaceans, only 50 species are pathogenic to humans. With regard to liver flukes, the species Clonorchis sinensis, Opistorchis viverrini and Opistorchis felineus are considered an emerging problem in veterinary public health. Between 2003 and 2010, there were 7 outbreaks of opistorchiasis in central Italy which involved 113 people due to the consumption of fish parasitized by O. felineus. The purpose of this paper is to evaluate the RASFF (Rapid Alert System for Food and Feed) data on the presence of parasites in fish and fishery products, with particular reference to trematodes.
