Summary

This paper presents the results obtained after some experiments and numerical simulations during the processing of poultry meat using refrigeration technology. There are three main methods of theoretical modelling of the refrigeration process in the world: graphical methods, analytical methods and numerical methods. Because the first two methods are already mature and have been presented in a number of studies, the present study focuses on the latter method.
