Summary

An example of this process is the fruit and vegetable hydrocooling within the postharvest technology. The aim of the work is to determine the effect of the product shape and the water flow on the "h" value (surface heat transfer coefficient). To investigate the importance of these factors, a cylinder and a cube made from copper were cooled using flows from 4 to 15.2 l/min. The results show that there are significant differences in the "h" value which are due to these factors.
