Summary

A simple model of heat and mass transfer for palletized spherical products was developed and validated with regard to experimental results. The integration of local cooling conditions in a simple modelling procedure makes it possible to detect critical points, in order to suggest possible improvements to produce packaging. The monitoring of critical points (the hottest and the coldest) should also make it possible to monitor cooling processes.
