Summary
The susceptibility of peaches (Prunus persica) cultivars Elegant Lady and Snow Giant to mealiness, leatheriness, flesh browning, and gel breakdown were studied using fruits harvested at different maturity and stored at 0 or 5 °C. Correlations between mealiness and flesh browning, leatheriness and flesh browning, and leatheriness and gel breakdown were significant. Mealiness was not correlated to gel breakdown.
