Summary
To supplement the data from a number of previously published studies, the evolution of the gustatory quality and aroma of four varieties of apricot was monitored after cold storage and ripening at 20°C. The ripening period, either just after harvest or post-storage, proved to have a key role in the full expression of the fruits' gustatory quality, especially their aroma. Nevertheless, picking at the optimum stage of ripeness is still essential to ensure good taste potential. The temperature (0 or 2°C) and duration of storage had no detrimental effect on the quality of these varieties.
