WITH THE ADVENT OF THELARGE SCALE APPLICATION OF CONTROLLED ATMOSPHERE STORAGE IN SOUTH AFRICA DURING THE LATE SEVENTIES, IT HAS BECOME IMPERATIVE THAT APPLES ARE HARVESTED AT AN OPTIMUM STAGE OF MATURITY. THE OPTIMUM STAGE OF MATURITY IN CERTAIN VARIETIES CAN BE DETERMINED BY NOTING AN ALTERATION IN THE RATE OF CHANGE THAT OCCURRED IN THE VARIOUS MATURITY INDICES FROM ONE WEEK TO ANOTHER AND THESE CHANGES CAN BE PREDICTED FAIRLY ACCURATELY FROM 4 TO 4.5 WEEKS IN ADVANCE. THE ARTICLE REFERS TO < CALENDAR WEEKS > SINCE THEY ARE INTERNATIONALLY ACCEPTED AS A TIME UNIT AND THAT SHIPPING PERIODS ARE LINKED TO CALENDAR WEEKS. A. H. S.
