Summary

The objective of this work is to prove whether an advanced grade of maturity at harvest that is greater than the habitual one, could be convenient to transport and marketing, because of increased weight, size and quality of the plums. The study was performed during three years with two different maturity grades and with cold storage (0 °C, 97% relative humidity) during about 25 days. December is the date when plums obtain better price in the market. The conclusion is that it is possible to get fruits of good quality, at the end of the transport and commercialization, if the harvest is made with the following characteristics: 50% of red covering, 0.15 g acidity, 11.2 soluble solids and 8.5 pressure firmness.
