THE ROLE OF REFRIGERATION IS SHOWN BY THE AUTHOR WHO RECALLS THAT AT PRESENT BRITTANY CONTRIBUTES, AT 12.2%, IN THE VALUE OF FRENCH AGRICULTURAL PRODUCTION AND, AT 20.4%, IN STOCK BREEDING AND AT 7.5% IN VEGETABLE PRODUCTION ; FOR FISHERY, THE CONTRIBUTION OF ITS PRODUCTION IS 43%. SUCH A DEVELOPMENT COULD BE OBTAINED ONLY BY AN INCREASED USE OF REFRIGERATION: IN 1980, BRITTANY HAD 37 PUBLIC COLD STORES ; WITH FREEZING CAPACITIES OF MORE THAN 2,500 T/DAY ; ITS CONTRIBUTION IN THE FRENCH PRODUCTION OF FROZEN VEGETABLES IS ABOUT 40%.
