Résumé

The article presents a review of the discovery of this group of organisms, followed by discussion of their characteristics, spoilage potential, and testing procedures. The first indications of the existence of these unusual organisms came in 1967. A report in 1984 implicated these organisms in the large-scale spoilage of shelf-stable apple juice in Germany, following an exceptionally long, hot summer. Growth of A. acidoterrestris seems to occur from around 20-60 deg C, although extremes of 12-80 deg C have been reported.
