Résumé

Research on modified atmosphere and controlled atmosphere storage of bananas and plantains is reviewed. The optimum atmosphere composition for bananas is 2-5% O2 and 2-5% CO2. These atmospheres delay ripening without causing any deleterious effects, although recent research has suggested that bananas which have ripened under controlled-atmosphere conditions are lower in quality in terms of visual appearance than bananas ripened in air. Modified-atmosphere, sometimes in combination with ethylene-absorbing agents, is commonly used during long-distance sea transport. Low pressure storage can also maintain fruits for a longer period in very acceptable quality. Due to the availability of fruit almost all-year-round and because of cost considerations, controlled atmosphere is not commonly used and low pressure is not commercially used. There is potential for use of controlled atmosphere on marine ships.
