Résumé

Modified atmospheres are now frequently found in the packaging of consumer items and the industry is already turning towards controlled atmospheres within refrigerated containers during the transport of produce. These technologies continue to develop and offer further opportunities for quality improvement through an extended "atmosphere chain". The paper discusses the types of modified atmospheres employed, the history of this technology and proposes likely further developments.
