Chilling injury development and ethylene production in eggplant fruits (Solanum melongena L.).

Résumé

The objective of the work was to analyze the possible relation between ethylene production and chilling injury development in eggplant fruits cv Japanese. The authors determined ethylene production, internal ethylene levels, 1-aminocyclopropane-1-carboxylic acid (ACC) content, pH and the evolution of chilling injury symptoms in eggplants stored at 0, 5 and 10 °C for 15 days. Exposure to temperatures of 0 and 5 °C resulted in a severe injury of fruits, whereas exposure to temperatures of 10 °C did not cause any damage. Results showed that eggplant cv Japanese, a nonclimacteric fruit, increased ethylene production after low temperature stress.
