Conservation en atmosphère modifiée du fruit de l'araza (Eugenia stipitata McVaugh).

Modified atmosphere packaging of arazá (Eugenia stipitata McVaugh) fruit.

Résumé

Arazá (Eugenia stipitata McVaugh) fruit were stored in air for 3 or 7 days at 20 °C, in air, or in macroperforated and unperforated low-density polyethylene (LDPE-2 38 m, LDPE-3 74 m) film bags for 14 days at 10 °C to test the effects of modified atmosphere packaging (MAP) on fruit quality. Unperforated bags were also actively modified with 5% CO2 and 5% O2. Fruit from all treatments were kept for a shelf-life period of 3 days at 20 °C. Skin scald developed in air-stored fruit after 3 days at 20 °C. All MAP regimens prevented development of skin scald, reduced weight loss, shrivelling, softening, and decay. LDPE-2 active MAP is recommended for arazá fruit to maintain acidity, organic acid concentrations, and flesh firmness for the fresh fruit market.
