Résumé

Nopalitos, the young cladodes of prickly pear cactus stems (Opuntia spp.) are commonly consumed in Mexico, and shown to reduce blood glucose levels. Nopalitos are very perishable. In the paper, the authors tested the effect of packaging nopalitos in passive modified atmosphere, where O2 concentration was decreased to up to 8.6% and CO2 concentration was increased by up to 6.9%, and holding at 5 °C by up to 35 days. Modified atmosphere packaging significantly increased the storage life and decreased quality deterioration.
