Postmortem denaturation of fish muscle proteins: changes in some myofibrillar, intermediate filament and costameric proteins.

Résumé

An understanding of the exact mechanisms involved in these changes has not reached general agreement. Although it has been noted that some myofibrillar proteins undergo degradation, no apparent changes occur in contractile elements from the ultrastructure point of view. Behaviour of several proteins, Alpha-actinin, titin, nebulin, and Distrophin is studied. An important point in the understanding of the postmortem mechanisms of fish muscle changes would be the identification of the proteases involved.
