Heat pump multi- and single-stage atmospheric freeze fluidized bed drying of protein powders.

Résumé

The pharmaceutical, nutraceutical and food industries main problems in drying are related to powder quality and low rates or high costs. The market success for a new powder depends on properties and economics and the challenge is the development of technologies for enhanced powder quality, low energy use, low cost and minimum environmental impact. The heat pump fluidized bed multistage drying is a potential alternative to produce protein powder. This drying technology consists of atmospheric lyophilization to attain a stable structure, and evaporative drying to increase water removal rates. Seven protein drying runs were made in a lab scale multi-stage heat pump dryer under controlled conditions to produce different quality powders. The raw materials and powders were characterized and compared based on kinetics, colour, density and deformation. Hence, the objectives of this work were to compare multi-stage drying and to identify ways of improving moisture removal while keeping powder quality.
