Effect of pressure precooling, outer packing and cold storing on the quality of broccoli.

Résumé

The effects of pressure precooling (PC) and outer packing with the expanded polystyrene cases (EPS) and the corrugated paper boxes thermal conductivity on the quality of broccoli during 10 days storage at 0°C were studied. The results showed that the quality of broccoli that was precooled by pressure precooling equipment and then packed with expanded polystyrene case was better than that with corrugated paper box. During cold storage, the weight losses of broccoli increased gradually; the colour of broccoli was almost unchanged; the total soluble solid and vitamin C contents decreased gradually; the chlorophyll content decreased in the earlier stage and then accumulated. The freshness was kept best with PC + EPS, not only in reducing the weight losses of broccoli, but also in reducing the losses of the total soluble solid and vitamin C contents.
