Résumé

Postharvest fruits of sugarapple (Annona squamosa) were stored at a room temperature of 27-33 °C and RH 85-90%. After 2-3 days, fruits softened, the peel split and the climacteric peak appeared. The permeability of the pulp cytomembrane increased, correlated with the pH value. When the fruits began softening, the activities of peroxidase and superoxide dismutase reached a maximum. The activity of catalase was highest at harvest and decreased during storage. The activity of polyphenol oxidase in pulp was very low and decreased with increase in storage time.
