Résumé

Highly effective strains of antagonistic bacteria, Pseudomonas and Mycrobacterium, capable of synthesising antibiotics have been identified and isolated from natural substrates. Tubers of potatoes treated with a liquid culture of the antagonist bacteria before long-term cool storage did not suffer dramatic physiological damage. Overall, the use of Pseudomonas and Mycrobacterium strains for biological protection has proved effective at maintaining the keeping quality and nutritional value of potato tubers during long-term cool storage.
