Résumé

Evaluations of flesh firmness, total soluble solids, total titratable acidity, skin colour and incidence of rots and physiological disorders were performed on Golden Delicious apples after 2.5, 5, 7.5 and 10 months of controlled atmosphere storage, at the opening of the stores and after exposing fruits to 7 days of cold storage at 1 °C plus 7 days' shelf life (ambient temperature). Fruits held in cold storage maintained good consumption quality for 5 months, whereas for those in controlled-atmosphere storage, this period was prolonged to over 10 months.
