Résumé

This research has only a ten-year-history and involves investigation of the effect of a high-voltage static electric field (HVEF) for preservation of fruits and vegetables. In the study described, the strawberry was used as experimental material to explore the effects of 50 and 100 kV/m HVEF on the respiration rate, flesh firmness, soluble solids content, polygalacturonase (PG) activity and carboxymethylcellulase (Cx-cellulase) activity. After HVEF treatment, the respiration rate decreased obviously while the soluble solids content in fruit kept at a high level. The activity of polygalacturonase and Cx-cellulase reduced but the fruit firmness declined slowly.
