Influence de la saison de récolte, de la maturité des fruits et de la température d'entreposage sur l'altération due au froid des citrons 'Eureka'.

Influence of harvest season, fruit maturity and storage temperature on the development of chilling injury in 'Eureka' lemon fruit.

Résumé

The effects of harvest season, maturity and storage temperature on lemon cv. Eureka chilling injury susceptibility were investigated. Observations were recorded for rind colour, juice content, soluble solids and titratable acidity. Rind colour showed the greatest change in yellow fruits stored at 13 °C. At the end of cold storage, yellow fruits harvested in winter were juicier than those harvested in summer. Stored fruits showed little soluble solids evolution compared with fruits at harvest. Fruits kept at 13 °C showed higher titratable acidity than those stored at lower temperatures. Pitting and peteca incidence were greater in summer-harvested fruits and in those stored at temperatures below 5 °C. Membranosis in winter fruits and albedo browning in summer ones were observed in those kept at 5 °C.
