Résumé

Oxygen absorbents were evaluated aiming to extend the shelf-life of minimally processed leaves of kale. Samples of minimally processed kale were packed in polystyrene trays wrapped with polyvinylchloride (PVC) films, with or without sachets of oxygen absorbents. Packaging with the absorbents decreased the oxygen level to 5% compared to 8% in the packaging without absorbents. There were no significant differences between the two treatments for vitamin C contents, during the storage period at 5 °C. Aerobic mesophilic and psycrotropic counts reached 10 000 CFU/g and 100 000 CFU/g, respectively, after 14 days of storage and were not significantly affected by the presence of the absorbents.
