Résumé

Wounding (shredding and bruising) of winter cabbage (cv. Lennox F(1)) heads, following short-term storage, stimulated accumulation of phenol compounds. An increase in free proline level was induced by bruising. Shredding caused synthesis of this compound only in samples stored at low temperature, while a slight decrease was observed during storage at room temperature. Peroxidase activity was strongly induced by shredding and bruising. The sensitivity to wounding stress and storage conditions as related to the N fertilizer application was linked with free proline accumulation.
