Résumé

Rocha pears were harvested on 5 September 1993 in an orchard located in the main pear-growing region of Portugal. The fruits were stored at 0 deg C both in air and controlled atmosphere (4.1% O2: 3.5% CO2) until the end of March. After 4 and 7 months' storage, fruits were ripened at 20 deg C for about 10 days. Fruit firmness, titratable acidity, soluble solids, organic acids, sugars, aroma composition and the occurrence of CO2 injury were determined during each ripening period. Results are given.
