Predictive food microbiology: where do we go from here?

Résumé

Food safety is a growing concern as the food supply moves worldwide, as products change from commercially sterile to "fresher", and as more food is consumed outside the home. While consumers in the USA are particularly concerned about food safety, ramifications are international. Understanding the specific conditions that enhance microbial growth is essential to stopping health concerns before they can cause illness. As the volume of research in predictive modelling expands, the technique can be used more routinely to control hazards several ways: modelling can pinpoint the specific conditions that must be avoided, identify the degree of risk under different conditions, and alert processors and regulators to problems before they occur.
