Modélisation des températures de la viande dans des conteneurs frigorifiques maritimes pendant les coupures de courant.

Modelling meat temperatures during off-power events in refrigerated shipping containers.

Auteurs : SMALE N., EAST A., EDDY A., et al.

Résumé

Off-power events during transport in refrigerated containers are unavoidable during processes such as trans-shipment. For products such as frozen meat, where small fluctuations in temperature are not seen as critical and the heat capacity of the cargo is considerable, off-power events may endure for substantial periods without adversely affecting the cargo quality. As a result, containers of frozen meat are often transported from the abattoir to the port without active refrigeration to avoid the additional costs of generator hire. To assess the impact of unplanned off-power events and provide a tool for decision making regarding planned events, a mathematical model of a 12 m (40') integral refrigerated container loaded with frozen manufacturing beef was developed. Heat transfer was modelled using a zone based methodology, and validated through comparison with experimental data collected in a full scale environmental chamber.
